This week, we did our own version of festive drinks that would perfectly suit our summer holiday- refreshing and cool! We got Pina Colada and Cherry Mojito!
So get ready and follow our procedures below!
Christmas Pina Colada
Prep time: 5 minutes
Total time: 5 minutes
Makes 2 drinks
1/2 cup coconut milk (regular or light)
1/2 cup pineapple juice
1/4 cup (2 fluid ounces) coconut rum or spiced rum
2 tablespoons (1 fluid ounce) allspice dram
2 tablespoons (1 fluid ounce) SNAP
GARNISH: cinnamon sticks, freshly grated nutmeg, maraschino cherries, lime wedges, or pineapple wedges. Be creative!

Makes 4 drinks
For cherry simple syrup:
1 Bunch of cherries
1 cup sugar
1 cup water
For each drink:
10 mint leaves
1 tablespoon lime juice
2 ounces cherry simple syrup
2 ounces rum
In a medium sizes sauce pot, add fresh cherries, sugar and water. Add to medium heat and let mixture simmer for about 10 minutes. You do not want the mixture to boil or the cherries to burst. After all the sugar is incorporated and the mixture takes on a pink hue, take it off the burner and let it cool to room temperature. Once cherry simple syrup is cool it’s time to make the drink!
In a tall glass add mint leaves and lime juice. Muddle slightly to release all the delicious mint flavour. Fill glass with ice and add in 2 ounces cherry simple syrup and 2 ounces rum. Top with seltzer water and add some fresh cherries for garnish.
Note: This recipe will make about 1 cup simple syrup which is enough to make 4 drinks.
